What to expect

Escape to the heart of Tuscany for a unique farm-to-table cooking class with Barbara. Immerse yourself in the rustic charm of an organic farmhouse, Podere Montisi, as you learn the art of Tuscan cooking using the freshest ingredients straight from the fields. This intimate culinary retreat promises an authentic and immersive experience in the heart of the Tuscan countryside. The farm is located in the Travalle Archaeological and Agricultural Park, and the estate is part of the European protected areas of naturalistic interest for the importance of its flora and fauna.

Podere Montisi is an eco-friendly,  family-run farm, originally built in the 1500s :no chemical product of any sort is used here.  Work on the farm is done by Barbara, Saverio and their children, as well as a rotating group of Wwoofers from around the world, following the methods of biodynamic cultivation and fertilization.

Here Barbara and her family produce nutritious ancient grains, flour for breads and pasta, jams from ancient fruits, Tuscan herbs and salts, as well as the delicious extra virgin olive oil that Tuscany  is well known for. They also grow medicinal and officinal plants, vegetables, fruits and receive fresh eggs from chickens daily.

We will begin our journey with a guided tour of the organic farm, learning more about sustainable farming practices and the importance of using fresh, seasonal ingredients in Tuscan cuisine. Led by our chef Barbara, we will embark on a hands-on cooking adventure, diving into the preparation of classic Tuscan dishes using ingredients harvested right from the farm, such as eggplant pizza style, baked winter vegetables, cheese platter, pasta, glass of wine and olives from the estate and finally homemade tiramisu.
