The Art of Pairing: Wine, Cheese and Chocolate (Feb. 24)
What to expect
Uncover the secrets of Tuscan wine in the enchanting setting of Fattoria Casalbosco, located in Santomato and nestled among the rolling hills between Prato and Pistoia. Spanning 150 sun-kissed hectares, the estate overlooks the first ridges of the Pistoia Apennines and offers a breathtaking patchwork of vibrant colors—reds, purples, golds—lit by flashes of sunlight across the vineyards.
Led by the historic Becagli family, this experience takes you into the heart of the winery, where tradition meets excellence. You’ll explore how high-quality wines are crafted from select grape varieties such as Chianti, Dorato, and Carminio. The mineral-rich soil and south-southeast exposure ensure perfect grape ripening and exceptional winemaking, overseen by a master oenologist.
Your visit begins with a guided tour of the cellar, where you’ll discover how Casalbosco’s wines take shape—from the land’s unique exposure to the craftsmanship behind each bottle. The tasting features three selected wines plus Vin Santo, each paired with four Italian cheeses (from fresh to aged and blue) and four artisanal chocolates crafted by Cioccolateria Olmechi. Guided by local experts, you’ll explore how each combination enhances aromas, textures, and balance.
